So good!

Great combination of flavors, fresh salad, spicy sauce, and perfectly cooked salmon. The parsnip is a great sub for potatoes.

My new favorite meal!

The salmon is cooked to perfection, the salad is refreshing, the mashed parsnips are sweet and perfectly textured, and the avocado creme made with coconut milk is out of this world. Amazing all the way around!

nice combinations

I was very curious about the parsnip puree and am really glad I tried this version - I very much enjoyed it and would love to see it added more often to dishes! The salmon, salad and avocado crema all went together especially well. I feel like this meal showcases vibrantmeals at their best. 💙

Everything was great

It was very tasty. I loved the avocado crema. Eat it early in the week because of the salad. I ate mine on Tuesday after receiving it on Sunday. The salad was still good, but it was a tiny bit soggy. Just eat at the beginning of the week!
